Any U.K. unlocked Apple phone will certainly work OK in Thailand, you can change the language to Thai without problems. Now there is likely to be no cost saving and a probability of problems with repairs if the are required. The iPhones are not 100% the same in both countries and The warranty is valid only in the country it was purchased Now iPhones probably won’t need a warranty repair, but if there is a problem you have to pay. -

Another British Passport renewal help "needed post" - HELP!!
I've had two 10 year passport renewals in Thailand. Never had to deal with countersigned photos. I assume all agencies offer the same service as the application has to go through the same processes. -

Changing Non-O from consulate valid 3 months to non-O valid one year
Do you really need to renew your license. Be aware that expired TDL can be renewed up till one year expired. Yes you are best severed to renew license when you have a Non O status. Don't concern yourself with the link you posted. Visa exempt (visa waiver) entry is not listed. If you look back at my posts ...I suggested visa exempt for this upcoming visit and then Non O e-Visa for trip in the future when you can spend more time in Thailand for the process.
