The pasteurization of wheat flour reduces fusarium mycotoxins as well is probably why some wheat products tend to last longer than others. Though the freezer is a great preventative.

When I stay at my condo in Naklua I go to Harrys Bakery in Soi Buakhow, 100 metres from the market. I buy at least 10 loaves of sourdough bread and take them back to my home in Bangkok. I go to my condo every 3 months.

Could be. Humidity definitely plays a role in development of mold. 

 

I'm in a rural area, kitchen on ground floor and it is quite humid where I live, even with a/c on.

That's why I bake my own. I know what's in it and very therapeutic.

Yep ... flour, water, yeast, sugar.  After day 1, sliced & into the freezer till needed.

 

Don't know where some folks are getting their store bought, but a week or so after expiration dates, and it's stale or goes moldy.   Unless kept in freezer.   Wee bit of BS being posted, weeks ???

freezing bread is also supposed to change a lot of the starch to resistant starch making it better for your blood sugar spikes

I've been eating Thai bread for nearly 60 years. I'm still alive, now 84 years  old. So far, so good.

Doesn't mean that the quality is any good.

 

 

It won't kill you but Thai bread is way too sweet and full of preservatives.

Very healthy bread this is. Besides the carbs in the wheats, there is even 4.5% sugar added. Good for your blood glucose level.

I'm amazed that bread in Thailand (store bought, mostly sandwich, sliced) does not appear to get stale or mouldy, even after double or triple it's expiry date!....I Find the same with FULL Cream Milk which lasts 7 to 10 Days without going Sour or Off....

I cut mine into slices, and freeze with greaseproof paper between each two. Stops them sticking together.

Freeze it?, we eat the French way in this house,  soon as its baked its dished out and eaten.  Simple baguette dough- four ingredients....

What has happened to milk over the past 50 years, but in my experience, milk no longer turns sour, although it can spoil.
More than 50 years ago, you could filter sour milk, and then you had a cream that was very tasty. I don't know the English name for it.

It's the ridiculous amount of sugar added to the dough that makes it last.
