Please stop with this. Ubon is a province not a city to begin with, its huge having had Yasothon split off in the 70's and Amnant Charoen split off in 90's. Lovely Wats, and  rivers are to be found in many of its Ampurs it has 25.  So much more than just the city. 

 

As for one Wat I would go for Sirindorn Wararam as it is made with phosphorus tiles and uniquely glows at night. I can only find the one photo of this effect on the walkways.

 

A great place to have a lunch is on the river at Wat Kong Chiam, this is where the Mekong and Mun Rivers come together and its unique with the blue of the Mun River and the brown of the Mekong. 

 

It also has Sirindorn Dam and you can take the electric boats to tour it. Then stay in one of the nice lakeside resorts.

I must correct you a little, Ubon's city is called Ubon Ratchathani, same name as the province. Over the years have had to fill out many forms writing Ubon Ratchathani twice...☺️
