When you happen to be passing one of the many and various hardware shops dotted about the island, just pop in and buy a length of steel wire and attach a couple of pieces of wood to either end.

Go to Central in the basement.. I have seen it there...

It is all depending on what kind of cheese you want to cut.

The one you describe is very suitable for hard, very matured cheese.

It will not work very well on cheese younger than 6 months, the string will go everywhere through the cheese but where you want it to go.

If the cheese is rather young, just use a good knife, do not try to saw with the knife.

Just press the knife through the cheese in a seesawing motion.

It might help to rivet a handle to the other end of the knife.

It might help to "wet" the knife with some margarine.

Or, if you are very enterprising and in for a joke. heat the knife before applying it to the cheese.
