I am currently here on a 30 day visa on arrival and I am flying out on the 29th day---are there any cash departure fees or airport fees I need to pay in Baht or are all fees already paid in my airline ticket?

For a few years now the 500 Baht departure tax has been included within the flight ticket price, assuming your flight ticket is 'normal' it is very very unlikely that you would encounter a further tax demand.

HTH.

Cannot find it anywhere so wondered if it would be a good idea to have a list of the Departure FEE of a few places around?

Is there a Departure FEE in Malaysia? Singapore? Perth? Bali?

I know there is here and there is in Vietnam

There is a departure fee at all airports. Most of them have been incorporated into the ticketing fees. Bangkok got screwed up because the body that makes these decisions are as unprofessional as most are in Thailand. Now it has been corrected.

Jakarta is still collecting in cash i believe and Manila as well ?

Others have it in the "taxes and fees" you pay on top of your ticket.
