I'm trying to avoid carbs, which is a bit of a laugh as 90% of thai food is with rice or noodles. i don't live in a major city, but CM is about 3 hours away, so can get supplies there if needed.trying to keep the diet to protein and low sugar fruits... non-starchy vegetables...

As long as you are preparing your own meals, it's quite easy. If you're eating out/getting prepared meals from the market, it's close to impossible.

I live in the boondocks near no large town and have no trouble eating a healthy diet with 0 processed carbs.

Salad fixings, vegetables, eggs, tofu, meat, fish, pulses, all readily available at any market. Whole wheat bread and brown rice can be found even at 7-elevens and certainly at any Lotus of Big c.

The only thing I need to get from afar periodically is Balsamic vinegar for my salads and whole wheat pasta.
