I am an American and have a thai fiance. I will be marrying my thai fiance in the next few months and I want to take her to europe for our honeymoon and then to states to visit my parents before retruning to thailand. Will a passport work for her or does she have to get a tourist visa or anything like that?

Of course she will need visas. How difficult they are to obtain will greatly depend on both her status (likelihood to return to Thailand) and your status in Thailand now that she is married. It may not be a good idea for the honeymoon as it is likely to take time that you would not have.

She would be returning to Thailand as would I. I work in the Middle-East now but will be quitting my job here soon.

Lopburi3 is correct, although if you were to visit only those European countries which are part of the Schengen group, then only one visa would be needed for all.

She would be returning to Thailand as would I. I work in the Middle-East now but will be quitting my job here soon.

She has to prove that she will be returning to Thailand and that may not be easy for someone who has just married an American. If you have no employment here it will be even harder as the suspicion will be that you plan to avoid the normal immigrant visa processing time using a tourist visa to the USA and that she does not intend to return to Thailand. The Europe tour might fly but the USA trip I would guess is far from sure unless she already has a history of visa use/return and other positive factors. By all means go for it if you want but try to have an alternative in case you have problems.
