There are only three of what I would call Japanese style sushi places in Hua Hin. Sounds like you've tried two of them. The third one is on the corner in front of (and owned by, I think) the Sofitel. It's very expensive so I've never tried it.

We eat Sushi a lot and think Fuji in Market Village (not Villa Market smile.png ) is the best but it is a bit out of our normal budget as well so we only go there occasionally. We go to Sakura on soi 94 a lot and both my wife and I think it is very good for the prices charged.

So, try the one in front of the Sofitel and if that doesn't suit you, you'll have to go to Bangkok. There are lots of authentic Japanese sushi bars there in area of middle Sukhumvit (even sois 22-26, odd sois 31 to 35).

Try NekoJung on the railway road between soi 88 and 80. Chef Top is a real character. Food is great for the price, similar to Sakura. It's the place that has lanterns hanging outside, I am not sure if there is parking for cars.
