I will be paying off the final 16 months of my (wife's) repayments on my car soon in one lump.

How -

1. Do I change it into my name

2. Get proof of residence when house is in wife's name

3. Can I avoid the rest of the interest

Depends on the finance co. Go in and talk to them,if you're not going to save any money then maybe better to let the agreement run out. If you pay it out you will have to go in with wife and she tell them to put the car in your name. You can get the letter conf. res. from your embassy,Thai immig. or the local police.
