The flavouring for Cumberland is salt, pepper, nutmeg, ginger, sage and thyme. All the flavourings are measured as a percentage of the weight of the meat and so are easy to calculate. As the sausages are for home use you do not need Sodium Nitrite preservative, also known as Prague #1 powder the addition of which worries some people.
