I know this is a long complex process, but in my current situation I am just trying to guage the probability of success. I have lived with my Thai girlfriend for 4 years in Thailand. I am in the US now. She works as a concierge at a 5 star hotel. She would like to come here, get married and eventually work. I have a job but next to no savings.

What is the probability of success? Does my Thai fiance have a right to come here, marry me, live and work as long as it is a genuine relationship? Or do the powers that be regularly keep American husbands and Thai wives apart?

There should not be any problem. It will take the normal period of a few months and a bit of paper work but if you have employment (there is a welfare type minimum you have to meet) do not believe she will have any trouble. This is for marriage; so employment is not something to be considered at this time. The more paperwork on your relationship the better.
