Top Chefs Showcase Hua Hin’s Finest Seafood as Big Fish & Bar Hosts Canvas Local Tour 2018

Big Fish & Bar, the signature restaurant at Hua Hin Marriott Resort & Spa, will host a prestigious culinary event in May when the Canvas Local Tour 2018 visits this stunning seafront venue.

 

Riley Sanders, executive chef of acclaimed Bangkok restaurant Canvas, will join forces with Xavier Charest-Réhel, Big Fish’s own award-winning head chef, for an exciting evening that combines the creative inspiration of two of Thailand’s top culinary talents.

 

Diners will be able to enjoy an exquisite six-course tasting menu featuring the two chefs’ signature dishes and unique collaborations. Called the “Sea Menu”, this gastronomic journey will focus on Hua Hin’s delectable seafood and other local ingredients.

 

“We are delighted to welcome Chef Riley to Big Fish for southern leg of the Canvas Local Tour 2018,” commented Chef Xavier. “Overlooking the Gulf of Thailand, Hua Hin is famous for the quality of its seafood. Chef Riley and I have created an enticing menu that showcases the finest produce this region has to offer.

 

“We look forward to presenting our Sea Menu to guests on 18th May and introducing them to some delectable dishes. We also hope to collaborate with Chef Riley and the Canvas team on more exciting initiatives in future,” Chef Xavier added.

 

The Sea Menu will feature a series of artistic dishes that demonstrate the skill and flare of Chef Riley and Chef Xavier, and highlight the natural quality of Hua Hin's local produce.

 

The evening starts with a light dish of chilled lobster with lemongrass, daikon and sea grapes; followed by grilled squid with lychee salad, shallots and Thai basil. The menu then continues with steamed black crab served with sticky rice and roasted tomatoes; followed by fried tiger prawns with dried shrimp powder, tamarind aioli and pickles.

 

A sumptuous red snapper cooked in banana leaf with green chilies, lime, garlic and ginger will reflect the incredible aromas and spices of southern Thailand; and finally, the dessert of slow-roasted pineapple with local rum, palm sugar and black sesame will provide an exotic ending to this fragrant feast.

 

The Hua Hin edition of the Canvas Local Tour 2018 will take place at Big Fish & Bar, Hua Hin Marriott Resort & Spa, on Friday 18th May 2018. Starting at 6pm, this one-off culinary occasion is priced at THB 1,900++ per person for the six-course tasting menu, accompanied by Sanpellegrino water. A wine-paired menu is available for THB 2,900++ per person.

 

The Big Fish event is one of three stops on the Canvas Local Tour 2018 - a culinary road-show that gathers four chefs from the different regions of Thailand to create unique dining events that celebrate local ingredients and creative talent.

 

The tour commenced this month with a “Plant Menu” dinner from Phuket, and will continue in May with the “Sea Menu” at Big Fish. Then in June, the tour will conclude with a “Fire Menu” at Canvas in Bangkok.

 

Overlooking Hua Hin’s golden beach and the endless azure sea, Big Fish & Bar is a bright beachfront venue where diners can discover creative and contemporary cuisine, either in the vibrant sea-facing restaurant or on the al fresco terrace.
