"TEXAS" In European cities you have to search carefully to find an "Italian Restaurant" where Italians work "Texas Style" would be more adequate. No I have never been to Texas but I have eaten all over the world. What is absolutely atrocious here is the wait staff service. Been to Beefeater many times because other guys want to go. I actually didn't like it the first two times but it has since grown on me. I really like the potato au gratin there. Not saying the steak is better or worse but I prefer having a steak at Calles a few feet away from Beefeater. I really miss La Queue de Cheval steakhouse in Montreal. I lived in Mexico for a year and I much prefer Tex-Mex or California-Mex than the 'authentic" Mexican food. Why can't a proper chef who knows cooking, not cook food outside his ethnicity or country of origin? Many Michelin starred British chefs serving French fine dining in England. The ethnicity thing is a can of worms. Hopefully not literally. It really helps to KNOW what the food is supposed to taste like if you're trying to do something at least somewhat authentic. So in that sense native chefs are much more likely to KNOW what the food is supposed to taste like if they grew up on it. On the other hand great chefs not matching nationality can do versions of cuisines that might even be more interesting / more delicious than most native chefs. Nationalities don't "own" their cuisines. Food is global and it's getting more so. An example of one of the most renowned Mexican food experts ever isn't Mexican -- Briton Diana Kennedy. https://en.wikipedia.org/wiki/Diana_Kennedy There are a lot of nationalist / ethnic assumptions about food. If the customers don't find it up to snuff, the restaurant will close. I think you're making a mountain out of a mole hill.
