Heading there for a few days in May. Which is the best resort?

 

I don't mind a few parties but equally can enjoy somewhere more peaceful too.

For me the south west- I'm not a resort guy, but it's a great area.  Down there you have the towns of portimao, Lagos, and Silves (a bit east).  Also Monchique in the mountains with its eucalyptus trees, natural spring and spa town.  There are some resorts in the area too, but I'm not familiar with them.  As you go west to the atlantic coast you have much deeper water and cliffs, but some quite quiet beaches (used to be at least).  The area is well worth a couple of months in my opinion.
