You can apply for one 30 day extension of your 30 day visa exempt entry.

You could apply for a 60 day covid 19 extension prior to May 24th as well after getting the 30 day extension.

If you were to enter on a Visa Exempt 30 day, then extend for a further 30 days, after that initial 60 days can you then also apply for a 90 day 'O' visa? ( am married to a Thai )

You could apply for a non-o visa but you have to do it on or before you have 15 days remaining on the 30 day entry or the 30 day extension of it.

Thank you for the helpful information as usual @ubonjoe. Is that 60 day covid 19 extension a pretty sure thing or do you need to demonstrate some sort of reasoning for the covid extension? Are proof of funds needed?

It should not be a problem to get the 60 day covid 19 extension. You will complete a affidavit that has tick boxes for the reason you need one. No financial proof is needed.

Since you are married to a Thai, you have an additional (one time) pretty much guaranteed extension. You can apply for a 60-day extension to visit your wife. Mainly, you just need your wife to be with you when you apply. The Non O visa from immigration is definitely possible in principle, but there are quite a lot of requirements that need to be satisfied (and these can vary between immigration offices).
