Best place to go for a child's Student Ed visa and mother's Parent/Guardian visa?

I'm trying to switch my 10-year-old son's Extension from piggy-backing on my work extension, to his own ED visa.  I also want to switch my wife's Extension to a Parent/Guardian extension.

 

Although they both originally had non-O visas issued in London back in 2016, they've been on continuous extensions since then.  My son's school advise that it will be necessary for both of them to get new O visas, outside Thailand, in order for the extensions to be switched.  A major pain, as I had assumed it could all be done in Thailand.

 

If we do need to leave Thailand, which Embassy/Consulate is recommended these days?  My son is British and my wife is Lao.  I understand that the application process is all online, but the applicant/s need to be in the country they are applying from.  How long should the process take?

Recently chap posted experience of Non O (marriage) e-Visa applied for in Vientiane with ridiculously quick approval. Almost overnight.

Thanks.  I'm still hoping it might be able to be possible to switch my son from my dependant to his own ED extension, without having to get a new visa.
