I always wanted to open a Christmas deli called Cheeses Of Nazareth . . . still haven't got around to that yet.

hey...them arabs got some mighty fine local feta and there is a salad with feta cubes with olives and spices...a bit too rich for my liking but if I combine the feta with some salad greens and eat with arabic bread I'm cookin'...no need for any additional dressing...

For the not so rich there is excellent Danish Feta and you don't have to dress up.

I have to buy Parmesan in bulk whenever we visit Rimping civilization. How you cook without cheese is beyond me.

yeah...feta has a mystique as it's not something that you snack on like cheddar but it appears everywhere as an ingredient in salads and casseroules...

I bought some at the supermarket in Jeddah but the feta salad that I described above is available daily at our lunch buffet and I pig out without remorse...the store bought stuff is incredibly cheap like about USD3 per kilo...

it looks like one could make a gastronomical career outta evaluating the relative merits of worldwide feta...cheddar available in western countries but local feta available everywhere...a 'fresh' cheese as opposed to a matured one and therefore easy to make...

(then, a polish type who lived in France wafted the aroma of a ripe Port Salut and grinned evilly thru a haze of Galoise and said: 'yew haven't lived until you've tasted this, my friend...')

When making lamb kebabs in the Kentish hospital back in the 90's the Greek doctor's wives used to slice a pocket in the pitta bread and drop a few cubes of feta inside.

Left to warm on the barbecue, the feta expands and takes on a marshmallow like texture.....it tastes absolutely delicious served up like this with plenty of the marinated lamb and salad.

Port Salut, the first time I camke across it, the smell made me gag.

I was working in a provisions store, Shepherds Market, Mayfair.

The well to do customer living in Curzon St conned me, (a young kiwi) to come for afternoon tea one Sat after work.

OMG, she had the foul before named cheese on the table with crackers.

Amazing, with a glass of wine it was quite tasty.

Since then I am a big fan of Port Salut.
