Ok...found this quite funny. Took this video today. Mommy swan is sitting on the eggs yelling for hubby. Actually, shes having a bit of a hissy fit. Hubby comes and they have a bit of a barney. Hubby then takes over the nest sitting and starts tidying up the nest..all the while getting an earful off his missus. :)

Oh..it wasnt because of me btw. I was cautious. She was hollering for him well before i was even a tiny bit close to her (i was on a bicycle and could here her honking away). She was still giving him an earful when i left too!

From what I've been able to learn, geese and swans (including wild ones) mate for life and those two were just acting like any married couple... "George! What took you so long! You were flirting with that hussy down at the lake, now weren't you. I TOLD you to be back in 15 minutes and it's been almost an hour. Get over here on the nest right away!"

Camels? Well, they are just nasty critters that stink. Saw too many of them in Australia.

Baked Swan

To bake a Swan

Scald it and take out the bones, and parboil it, then season it very well with Pepper, Salt and Ginger, then lard it, and put it in a deep Coffin of Rye Paste with store of Butter, close it and bake it very well, and when it is baked, fill up the Vent-hole with melted Butter, and so keep it; serve it in as you do the Beef-Pie

Camel's a bit over rated though.

I took a camel ride in Kerkennah several years back. My camel was very affectionate. After the ride I fed it a sugar cube with my mouth..haha. She took it from me gently. Not all camels are nasty critters! :)

How do you serve the feathers?

We always plucked the feathers and discarded them.

Mind you, the best way to cook them without plucking, is to make a heavy dough.

Wrap the bird, (any bird will do) well in the dough, chuck into th embers of a big fire, or even in a oven.

Keep the fire stoked.

Cook for about 4 hours for a swan.

Break dough away and the feathers all come away too, mouth wateringly tender,.

Great when camping.... anytime really.

Enjoy.

Dunno about camel, mite be good the same way, pigs are great cooked that way.

Scalding removes most of the feathers, we used to do it with ducks.

Thanks Eek! All those clips and photos were taken either around the bungalow or within a bike ride's distance. There are so many critters around Chiang Mai. Just this morning I was attacked by a fork-tailed bird up by Doi Kham for some reason.

And Ian... I think all fly fisherman are into bugs! I've had friends leave dinners when they saw a caddis fly hatch get started.
