As the heading suggests, can anyone recommend an email client for the iPhone 3Gs that filters out spam? There are processes that you can run before you check your email, but I'd prefer an all-in-one utility (if one exists).

Gmail. If you have another email account elsewhere, have gmail collect it. There are quite easy methods to enable push on gmail accounts.

Interesting idea phazey. I've installed the GMail app and added my POP3 into my new GMail account. How do I enable PUSH...I can't seem to find any reference to that?
