If they're protected, MacTheRipper or MacDVDRipper Pro.

If not, Handbrake or just about anything MediaConverter (many variations).

Editing is a different matter, and could depend on just what you want to do.

MacTheRipper is a bit of a grey area product as it strips or attempts to circumvent encryption. If you want a legal product either Disc Utility (Applications/Utilities/Disc Utility) or Roxio's Toast Titanium. Bit as JusMe says it depends on what you are trying to do.

For ripping, if it's a disc you bought from one of the Thai vendors, it probably doesn't have any encryption, so simple ripping is all that's needed.

So, for simple ripping and conversion to a format suitable for the Pad, you could use something like Handbrake (free) or many different media converters.

As for simple cropping and splicing, I've found Quicktime to be perhaps easiest to use - just drag the slider across to a suitable break, and then cut and/or paste, or cut and create a new file by pasting what you've just cut into it and saving that bit.
