English Or Thai?

Are the interviews in the US or Canadian embassy in English or Thai? Do all letters and documents have to be translated to English if they are in Thai? If so is there an official way of doing so?

At US Consulate they would normally be in Thai for a Thai unless the applicant is fluent in English. Believe they can also read Thai. But understand some Consulates use local translators so if going to one of them I would translate material first just to be sure the person making the decision gets the facts and not someone else's opinion.
