There are a few bars that show sports, and I know of a few Giants fans that live in Kan. The timings aren't great though might be worth asking a couple of the bars on the strip.

Doubt that you will find anything open. They are televised live on True DSTV, Fox Sports HD, Channel 680 starting at 0700.
