I am a US citizen currently in Thailand. All of the entires on my triple entry visa have been used, and yesterday I extend the final visa so I am good for about 29 more days. Ideally I would like to stay 1-4 more weeks after the extension expires before returning to the USA.

I am in Chiang Mai. Can I go to Mae Sai and will I be given an additional 30 days? Even 15 would be OK and even 7 might work.

A US citizen gets 30 days at the land border.

Unlikely that you will be refused.

Maybe a good idea to have a (flight) booking and sufficient cash to show.

I am the OP. I appreciate the responses so far and hope for additional confirmation that I will receive a 30 day entry stamp at Mae Sai when the extension on my current visa expires.

Yes you will get a 30 day visa exempt entry at Mae Sai. You can also extend that entry for 30 days at an immigration office.
