A short update.

After reading the positive reviews on the net about the Roadstone tyre we ended up going with the Rodian HTX RH5 265/70R16. So far very pleased, it seems grippy and is very, very quiet compared to our old (and hard) Bridgestone tyres. I can actually hear the engine now.

Less impressed, though, with the hard sell of new rims attempted by the tyre place. They claimed that our existing rims were not straight, and to be fair did show us the worst one mounted on the bench. When rotating the rim did have a slight wobble (mostly sideways) and according to them it would cause vibrations that in the long run will damage the undercarriage, and would also mean that the tyres would be leaking air. However, they couldn't explain why I didn't have any such problems over the last three years with the old tyres. I told them to just mount the tyres on our old rims, and driving home didn't experience the slightest hint of vibrations. Now, three days later, the tyres so far also haven't lost any air.
