As an Irish Citizen you need a visa to enter Vietnam, you can get one from the Vietnam Embassy in Bangkok, but it takes a few days.

When you entered Thailand you didn't get a visa on arrival, you're allowed to enter visa free, there is a difference.

You can get a visa on arrival, but it's unofficial and Vietnamese Consulates advise against it, this is what the Consulate in Ireland says vietnamembassy - tourist visa. To get the visa on arrival you have to pay for a letter from any one of a number of companies in Vietnam, there are loads of them. Armed with that letter you pitch up in HMC and pay for the actual visa. Whilst they're strictly unofficial and all their Consulates advise against it, I've never heard of anyone encountering a problem. These letters do take a day or so though.

Your Thai girlfriend can enter visa free.

Over 40 successful, hassle-free, visas-on-arrival for myself, fellow visitors and temporary workers of varying nationalities since 2005 at either Saigon or Hanoi airports. Some were even expedited with same-day service.
