Indeed, should be relatively simple if you prepare properly.

The posts on here and other forums about difficulties with Schengen visas are all about various Schengen embassies not applying the rules for qualifying family members of EEA nationals correctly.

A girlfriend is not a qualifying family member, so those rules wont apply to her.

Most of the topics were indeed on hassle with visas for eligable familymembers (spouse etc.) of non-EU persons married to EU/EEA nationals traveling to any other EU/EEA state. Some were also on regular applications concerning things such as an embassies wrongfully insisting or not informing about the right of direct access (by appointment, given within 2 weeks of the request) to the embassy or other sillyness.  But in most cases reading the instructions of the embassy lus the sticky topics here should be all you need to prepare properly and to be aware of your rights and answering the most common questions related to these visas.  But if you got any specific question, let us know. :)
