Thanks, but I rarely eat potatoes, let alone chips, unless being lazy. Emphasis on the lazy part, as too much work, (your version), as potatoes here, TH, are poor quality to start. Roasting chips aren't as good as deep fried IMHO They are 96% potato, and probably better than what is offered fresh in TH. I'm a LPOS when it comes to some thing. Chips being one of them. If doing anything with fresh, it would be simply nicely spiced roasted potato wedges or mashed potatoes, even home fries or hash browns. I've seen different was to 'upgrade' frozen chips. From nuking for one minute or quick blanche, then rough them up for more crispy surface area before frying. Nah, just cook / fry at correct temp is fine. Thicker 10mm chip though, as anything smaller, might as well eat crisps.
