Rarely you find one which is thoroughly baked thru. Too spongy for my taste . If I do find one I let it sit for one day in a paper bag before eating it. afterwards it will be put in plastic bag and into the fridge.

how do you avoid it to get spongy again ? Do you put it in a clay pot ?

If you maybe subjected your dark ray bread to sufficient cosmic rays then you might have lighter dark ray bread but I don't know if cosmic rays can penetrate the plastic bag or the fridge.
