Can anyone point me in the right direction of any bike shops which sell cruiser style bikes, preferable in or around Khon Kaen, Udan Thani or Korat. I am on an extension of stay based on retirement and hold a Thai bike license, what other document is required to register it in my name.

Thanks in advance

Here a shop in Khon Kaen: https://www.facebook.com/FrankSuperbike/

But in my opinion it depends on which bike you want if it makes sense to buy used.

If you are after a common big bike like a Honda CB500, CB650 or something else that's common you can usually get a nice discount.

If you are after a bike that's a bit more special (expensive) the used price is imho often too high and i would go for new

Disagree. Especially now in 2018.

Baht & Sold and websites designed for Expat/Felang punters, yes, the prices are generally  too high and unrealistic.

If you go onto the Thai websites designed for Thai punters like Smokybike and Kaidee, prices are downright decent and realistic. Check out some of the Ducati & Triumph prices for 3-4 y/o bikes.

Big Cycle, Udon Thani

Re the OP is after a "cruiser style" bike, i can concur, the above is a cruiser style biased shop, more so than something like Frank's in KK.
