A whole packet of MSG in the Som Tam? Trader explains why

Sanook reporters went to a large som tam (papaya salad) stall after netizens commented in droves on a video that showed a whole packet of monosodium glutamate  being dumped into a single mortar.

 

Along with the white powder that Thais call "chuu rot" (flavor enhancer) came two full bottles of nam pla or fish sauce and the usual other ingredients of one of Thailand's favorite dishes. 

 

Thanyaporn Natthawat, 42, explained that they were not overdoing the MSG. They used a huge mortar to make 40 to 50 bags of som tam at a time.

 

This they then sold at 50 baht a bag. 

 

The process saved time. 

 

Customers at "Yai Plerng" (Grannie Fire) were happy with the taste and there was a large clientele to sample the delicious food at the stall in Amnat Charoen, reported Sanook who said that the recipe had been handed down from mother to daughter.

MSG makes things taste better than they actually are.  (think about that one)

 

The stuff keeps me awake.  When they overdo it, first it tastes like too much salt, but then it takes my taste buds to a place beyond saltiness, and it really messes up my stomach.

Being  told by mummy, to put butter on my steak...

 - saying 'it makes it taste better'

 -  again... 'No, it makes it taste of butter' 

Both of them are in fact taste enhancers..

One can season food plenty with nam pla or even just good ol salt and pepper.

This translated reads to me

"A chef that is using 100 out of 100 possible ingredients is bad because he uses that 1 ingredient that my bandwagon is against, he would be much better if he only used 99 out of 100 possible ingredients because reasons."

 

I'm aware of the controversy around MSG as a whole, albeit haven't read any studies to see just how manipulated the data of it is, but I'm very much in favor of "everything in moderation", be that salt, water, msg, sugar(!), coffeine, smoking or what have you.

 

Since everything kills you anyway, might as well enjoy what you have. If peoples greatest concern with buying street food is MSG, then maybe it's not the MSG one needs to worry about but a hard look in the mirror.

If I eat something with MSG in the evening, I can't sleep before the early morning. Therefore I avoid Chinese restaurants. My favorite place, the Fishkitchen in Hat Yai sells some Chinese dishes and use MSG in them. But they have a remark on their menu, asking you to to tell the cook, if you have a MSG-allergy. http://harleys.de/fishkitchen/menu.pdf

Maybe need the clown for promotion that one.

Why of course. The Thai palate is the only, best, numbah one, never mind some strange frenchies. Pure MSG is the dogs ballz. Too bad it was invented by the Japanese.

The Thai food at Nahm not have enough MSG.
