Does anyone know if it's possible in 2023 to do multiple ED visas back to back through nonformal institutions? For example, a first year Thai language, a second year Thai Cuisine, the third year Thai massage, etc.

It's possible, in principle.

 

But you need to leave each year for a new visa (no ongoing extensions possible beyond 1 year from entering the country), so ultimately you're at the mercy of whatever embassy or consulate you apply. Their rules can and do change, often at short notice.

 

If your goal is to stay for years, it might be worth considering alternatives, for example formal (college/university) studies.
