Other than Big C who has good range of decent bread at fair prices but not wholewheat/whole meal ones, where else in Pattaya

can you buy sourdough or whole-wheat bread freshly baked? even though i have bread machine, sourdough and other sorts

of healthier breads are too time consuming ...

There's a few excellent bakeries over in the Jomtien area,

O Delices is my favorite for a sit down; https://odelicesjomtien.business.site/

And Harry Bakery on the corner of Thappayra & Thaprasit is good for a take away.

Though they seems to have good products any bakery that fancy themselves as 'French' prices will be to suite,

meaning, not cheap...as it shows a 450 baht gluten free bread...

Why not just bake your own, it's not difficult? If you don't have an oven then buy a bread maker, they're not terribly expensive, simple to use and give decent results.

Sourdough and other speciality breads are time consuming, I'd much rather just go out and buy one...

Have you tried TOPS supermarket there in Pattaya?

The one here does a wide range of tasty breads etc in their bakery. I would have thought that all of the big TOPS supermarkest would be similar.

Continental Bakery, Soi excite has good bread, very popular, in particular the English white toasting loaf 58 baht

There's one on Thappraya Road toom on the left going towards Jomtien from Theprasit junction.

Kippers & poached eggs for breakfast too.

I let my machine run over night. So I have fresh bread in the morning.

I can't see why it takes a lot of time with your's?

There are no GOOD Quality Bakeries in Pattaya like you would find in France , Belgium etc. Just very average quality at best. One has to go to Bangkok to find decent quality bakeries!

Depends on where you live/ready to travel:
- La Baguette on Thappraya, near the provincial court:

(they have a branch on Na Klua too but this one is better)
- La Cremerie on Toogklom-Talman, close to the railroad:

(they also have a new branch on Soi Siam Country Club: https://maps.app.goo.gl/4FcLuDRara4D18BGA )
These two are pretty fancy ones; for take-away purchases at a modest price with high quality I can recommend Chou Chou but it's in Bang Sare:

There's also the oldest of them all, usually overlooked, Holland Tulip on Soi SCC:

No knead sourdough does take time - but not yours.  Very little involvement and tastes way better than any shop bought.  Several YT videos for anyone interested enough

Warning:  Had to stop making it as I could down half a loaf while still on the rack cooling.

Clearly you know better than the heaps of YT videos and my own experience.  Some are open to new knowledge, others are not.

I stopped buying bread at biggie. Many times I go in there I see people touching the loaves with their bare hands. That means it's being handled all day long.
