Mainly just salt, pepper and cream or animal fat?

depends on the type of soup.

why not just find the recipe online and copy it?

they sell cream of brocolli soup at Big C. It has cheese in it.

anything goes. fat in the cheese adds depth of flavor and heartiness.

The basis of any good soup is a good stock — bones, celery, carrot, and onion, with a few peppercorns.

Make it ahead, freeze it, and you’ve got pure flavor ready to go into any soup or dish.

It’s cheap and adds real depth without needing extra flavouring loaded with salt or MSG.

Creamy, melted pig fat, heavily seasoned.

Yummy.....

MSG. adds a lot of flavor

Yes it does and no ... MSG does not deserve its poor reputation.  MSG is an amino acid which are the building blocks of proteins.

From AI:

MSG (monosodium glutamate) is a flavor enhancer that provides the umami taste, which is one of the five basic tastes (along with sweet, sour, salty, and bitter). Umami, in turn, is the savory, brothy, or meaty taste that's naturally present in some foods and can also be intensified by adding MSG. So, while umami is a taste, MSG is a specific substance that contributes to that taste.

One of my favorite soups is thom kha gai (chicken in coconut milk) which is sour from lime juice.  I also like to add lime/lemon to albondigas (Mexican meatball soup).  Another Thai favorite of mine is gang somme which is sour also but from tamarind.

I like mine thick and chunky.

Italian shredded chicken soup is my favourite

Two chicken breasts, pasta, diced potatoes, tomatoes, mushrooms, red peppers.

Plenty of gravy granules plus salt and a lot of pepper

Not forgetting a large chunk of sourdough bread to dip in it.

Looks like a great chicken vegetable soup. You could probably add a bit of tomato puree to thicken the broth a bit more if you wanted to.

What's gravy granules?

Not filling enough so don't bother making it

You can do a stew instead with meat, potatoes and veggies.

Not if you have the right ingredients. Beef barley soups with vegetables and beans are great. Filling too.
