Anyone know for sure if the Entry Clearance Officer will accept original share certificates (enough, say, to support a couple for two years in the UK), as evidence of ability to support?

If bank accounts only, are overseas accounts acceptable?

I see no reason why not as they are evidence of funds. The one question would be whether the money is "available". Money in non-UK accounts is also acceptable providing that the cash is accessible in the UK should the need arise.
