I have been decrypting and encrypting messages for years and this one is easy, I explain.

She says wine 2 times, the 2nd letter in wine is i, I is taken out of wine and becomes first I, the w has to skip 2 letter to the back as the i was moved to the front. So what you get is: I 2 new or in proper English: I too knew.

So most likely her next message will give us a clue on what it is she knows, but I think I already know.
