can anyone point me to a bakery or a shop, selling dark bread, eg. german style, nearby Muang Phon - half way from korat to KKC?

I have never seen nor heard of any in KK city so Phon maybe asking a bit much but one of the KK regulars will surely advise if there is.

no, we only come to visit my wives family 2 time per year for ~3 weeks.

We move to Phuket by car next week, stay there until April, then back to Phon and then heading for Europe again.
