One of my "lockdown food experiments" is home cured bacon. Only started today so have to wait a week before we know if it's actually worked.

I do it regularly, 100gm salt, 100 gm sugar, some liquid smoke and 7 gm Pink Powder. I week in a freezer bag and bobs yer uncle.

One thing we loved when living in Belgium was that all the bread was unsliced, even in the supermarket.

A machine was provided which allowed the customer to select the slice thickness required and then slice the loaf.

That along with French vin-de-table at 4.50 Euros for 3 bottles made life most comfortable (and more than somewhat blurred at times).

Indeed, and "a shortage of cuts" could also be applied to some of the "ladies" on offer :whistling:

I refuse to eat anything labelled as "reformed ham", if it's gotten its act together we should let it live.

I found that stuff dissolves to nothing ! It literally has no substance like blown air only good for feeding the fish at the Wat.

I see that their own multi-grain loaves went up from Bht 39 to Bht 65 last month, but now down to Bht 50. Lovely bread, but at Bht 7 a slice it's a bit over the top. Make my own now.

You guys are hilarious! Most of you chose to stay in a country that has a totally different standard and diet than in your home countries. After that complain over not finding the right sandwich or bacon and so on.....

If all is really so important for you. Here are some tips:

  • By baking your own bread you will always have better quality, freshness and taste.
  • By pork and smoke your own bacon.
  • At last, you can almost find replacements or do it yourself with most things if you want.

Luckily Madam has a suitable machete to cut it up. Or maybe I could hollow it out and serve soup in i

Not easy to buy a bread knife here. I had to bring my own from Oz as I prefer to slice my own when available. But our visits to Macro are less frequent then yours so the the Farmhouse brown fills in the gaps.

Makro's bacon and sausages have always been awful.

I get mine locally in Pattaya from KPN.

Some of the Makro sausages are 'German made', but still pretty awful.

A TLC sandwich?????

Yes, but you do know that the knife was made before you could buy sliced bread, right? That means in reality, that you were able to slice your own bread. Isn´t it amazing?

I've made some today. Not this recipe but pretty good. Went a bit overboard with the tamarind so upped the sugar to taste. Molasses? I make my own. Google it.

'slices' ain't 'sliced' ????????

Maybe, just maybe, they made up a new word (slices) that means 'looks like sliced, but not sliced'. ????

It would seem it took nearly as much effort making the load appear sliced as it would to just slice the damn thing. TIT.

Yeah, that sounds great. I make a lot myself too. No need to Google. Have written it down or remember since long back. On the other hand, I am also an old chef so got it in the blood a little bit.

                              HP sauce

1 kilo green apples cored and chopped

250g tamarind-*****----I'd reduce that by at least a half or less. Can always add a bit later.

I Ttbs molasses. You can buy it I make my own

Half grated onion

2 cloves minced garlic

250g brown sugar

4tbs ginger powder

4tbs salt- try less and add later

2 tsp cayenne pepper. I used half tsp chilli pepper

2 tbs dry English mustard powder

1 tbs curry powder.

1 litre white vinegar

half cup dry sherry. I didn't have any so omitted.

                  ------------------------

Simmer apples, onion, and garlic in vinegar about 20 mins till pulpy.

Add dry ingredients and molasses. I continued simmering about another ten minutes.

Then add sherry at the end if you have it.

I let it cool slightly. Liquidised it. Put it through a sieve and bottled it.

The colour is right and the taste slightly sharper than the real thing. But near enough for me. You can always juggle the ingredients a bit to suit your taste.

Good luck and tell me how you got on.
