Jingthing
... that Pattaya doesn't already have. Your choices could be overall national cuisines such as Brazilian, a more specific regional cuisine such as Hokkien Chinese, or a specialty food category such as an empenada shop. bojo
It's quite a difficult thread to answer as so many are already catered for. One might have a favourite cuisine, but for the mainstream, sales may well fall flat due to lack of popular interest..................................... With Thailand's coastal waters providing an abundance of seafood and rice being one of it's main staples; Cajun and Creole cooking would be well catered for, but it's a real niche cuisine outside of it's conceived origins, I can't recall seeing restaurants worldwide specialising in it...Po'boys however, would go down a storm in lieu of late night burger or kebab............................ action
I'd like a good 'Build your own' burrito place like they have in the lower west states in America. They usually serve other dishes, and you can sit inside, but service is walk through and fast. In Pattaya I love Taco House, Taco Taco and Mike's Mexican. But they are more dine in, family style restaurants. For example When I went to college this place was the best,https://www.bigcityburrito.com/menu/ My favorite place in Las Vegas: https://robertostacoshop.com/menu/ And one awesome one I found in Berlin:https://www.dolores-burritos.de/ two more that we don't have?? how about Hawaiian/Polynesian and a good Mongolian BBQ ? 1

Yes outside of Louisiana restaurants often market as New Orleans or Louisiana food and don't make the Cajun Creole distinction. As the majority of restaurants are gone it's hard to keep.track of what's left.
