Labour intensive ☺️ I might give it a try to compare one day, but I like the idea of cooking them whole and unpeeled so as not to wash away their ‘goodness’ by boiling them.

Not sure I agree with labour intensive,

30 mins from start to end (inc washing up) and enough for 4 meals seems OK to me.

20 mins from start to end for the 'cook in sauces' Indian meals, enough for 5 meals is easier though.

Potato skins are good for you anyway so might as well leave unpeeled

That’s time rather than labour. But anyway I meant the mashed potato. 
Peeling, boiling(which washes out some vital amino acids; vitamins to you) compared to just washing and sticking in the microwave and subsequently retaining those vitamins.

I leave them in my mashed potato, hence the careful washing. Most of the time they are perfectly edible, though every now and again, you’ll get a chewy skin.

Baked potato cut in half with Indian curry on top works well too.

Try microwaving them if you have a microwave. Baking them takes ages. 

I make up a rustic pork stew about once a month. Nice chunks of pork butt, whole baby potatoes and pearl onions, some carrots and beans and you are good to go.  Make it early before it gets hot. Lunch and dinner the first day. Then freeze portions for further use. A little salad and some French bread makes a good fast meal.

Leftovers ... heading out tomorrow, so what ever can't be frozen.  Nice harvest of figs today, for munching on the road tomorrow.

ROI from that (half mil baht) garden ... ????

Also good for roast potatoes. Microwave them for four minutes in their skins, cut into required size, toss in olive oil and herbs and seasoning of your choice and then into the oven. Perfect fluffy inside and crisp and crunchy on the outside.

I do as well. Do a mushroom, onion and chicken one using penne noodles, and use the pasta sauce I make up for a lasagna also. Same thing goes, freeze in individual packages, and serve with sides of your choice.
