Apply for a multiple entry Non-Immigrant visa O class by mail at the Thai Consulate in Houston. The visa is valid for a year and enables 90 day stays on each entry. This visa can be extended for a year at a time in Thailand if you decide to stay on.

Are you sure it is enough to keep you both happy? :o

You have the option Pat provided to test the waters but if you want long term stay you will have to get married and provide support to the tune of 400k per year from outside Thailand or apply for retirement type stay with 800k in a bank account for spending money each year. There is not way to avoid visas unless you have lived here for an extended period on these extensions of stay and apply for (and receive) permanent residence status. This is not something automatic.
