Completely random:

Restaurant: The Riverside (very reliable choice for Thai food) International food splurge: "The House".

Entertainment: Do a kantoke dinner and visit Simon cabaret

Places to visit: Doi Suthep, The Big Market (Kad Luang / Talad Warorot) and random small sois around town inside the old city moat area.

Tailor: Neramit

Dentist: Grace Clinic

Hiking: email [email protected] and ask what they have. (1 or 2 day tour/trek). Or check out www.chiangdao.com

Disclaimer: I'm NOT claiming that all of these are the absolute best or the absolute cheapest, but they're all good, convenient and reasonably priced choices. Google them up for more information and contact details. Several of them are made with the 3-day limitation firmly in mind, i.e. convenience & speed being more important than rock bottom price or finding completely out of the way destinations.
