Why? At that point you're just a piece of meat.  Personally if I'm dead, I could care less what happens to the meat.  You - are gone.  
Covering a body is simply a social convention.  And they do eventually cover the body here.  I've seen enough road deaths to know that.

A play on the brand of instant noodles  "Mama" noodles.  Highly amusing NOT!!

Not so much a respect for the dead but to save possible trauma by onlookers, family, friends etc. Covering the body is simply a good idea. Only forensics need to see the 'meat'.
