Why is it called khao soi if it doesn't have any rice in it?

Khanom Jeen is not originally Thai but has etymology from Mon people which is well integrated into Thai culture

If you are thinking of the type of dish Khao Soi takes its name from the noodles which are made from rice flour. As I understand it the noodle are produced by cutting the sheets of dough into strips. ซอย being the verb rather than the noun, but I expect that there are people who think that ข้าวซอย is 'lane noodles'.
ขนมจีน is one word and is the name of the rice noodles peoduced by pouring the very thin dough into boiling water through tool similar to a strainer. Again the dish eaten with various soup like mixtures and lots of fresh hebs, leaves etc. takes its name from the noodles.

https://en.wikipedia.org/wiki/Khao_soi Apparently khao something or other is Burmese for noodles and the dish is originally from Burma. Lots of it in Chiang Mai which is close to Burma. 

 

Bread is khanom bang, bread isn't a dessert either. Khanom can also mean 'snack'.
