im a non-eu citizen flying with my thai wife tomorrow for a 45 days euro trip

we already got the schengen visa 

when entering do we need to show the entire trip booked ? meaning already paid for ? 

we have a full itinerary but only the onward and return flights are paid for + the first hotel in frankfurt

the rest we rather not limit ourselves so we can have flexibility during our trip

would this be ok ?

I imagine your wife submitted her proposed itinerary when she applied for the visa and the visa officer was satisfied with what she submitted, and thus issued the visa.

My girlfriend/wife has made numerous trips to Schengen, though has never entered via Germany, she has never been asked for any evidence of her accomodation, or even sight of her flight tickets.
I would suggest that that she has her flight tickets to hand as well as the draft itinerary she submitted with her application, Border Officers are normally more concerned about flights and access to sufficient funds rather than hotel vouchers.

ok to be on the safe side i booked the 3 hotels we were planning to be in germany

to get germany covered at least

You should be alright if you can show a return ticket and sufficient money for your holiday.  Plans can change, nobody expects you to plan every night ahead and have all accommodation booked when you rather free roam. Tickets, money and the itinerary should be sufficient. They probably won't ask for any of it but have it at hand incase they do.
