I've seen one that's not asleep.

? Really

Bent over, head on the arm?

Typical office sleep position?

2:47 AM is a damn bad time to stay awake.

From own observation: at these times even a bigger place (5 storey hotel) had a single guard on duty after 8(!) PM until early morning.

I reckon it was staged

- probably the bf

or

-fake valuables declared

No way anyone would leave money and jewelry lying around when napping.

I'm wondering if they know each other...  perfect set-up.

I can speak from personal experience, 2-47 am is a terrible time trying to stay awake

Two things strike me as odd.

First they spent 100 baht on tubing and plastic wrap to protect the employees from covid, but nothing on the gold.

Second the sign that says;

"Expensive jewelry is not for sale"

The old story of small hotel night staff was that they had the key to the safe and would often do a runner with all the stuff guests had left in there for security.....

It hasn't always been the staff.  Sometimes, the hotel owner has stolen the guest's valuables.
