Bought a new Panasonic instant water heater for a second shower.

 

Due to space constraints, it will get splashed. Then touched to adjust temperature. I've been told that is not a concern, but I am concerned nonetheless.

It will be, yes.....

 

Brand new Schneider box with Square-D RCBO main breaker, and 3 each 1.5 meter long copper rods buried in clayey soil 2 meters apart....

Getting splashed isn't a concern although directing the shower at it should be avoided.

 

Proper earthing and an RCBO (it probably has one built-in too) and you're good to go.
