  • This is not cooking but it is a kitchen tip. Everything that is not too wet , I Vacuum seal, with my Foodsaver.  Use a bag one third longer than you need, and seal it all the way to the top.

Yes, it was 😊 There were these great Halva bars made with honey. I’d have a couple of them daily. Would also imbibe huge amounts of freshly squeezed grape juice( though diluted around half and half. I think my legs were the biggest many people had seen. I refused to use gears on any uphill. I utilised a huge amount of kcal.

My wife is an ex cellent Thai cook, ti the point that we had considered opening a Thai restaurant in the US, Our friend there owns one and he does pretty good for himself, but he is trapped there six days out of the week. so we decided , who needs that. 

But she sucks when it comes to western cooking. 

So necessity being the mother of invention. Here I am and I must say i enjoy myself doing it. 

Stuffed tomatoes and peppers.I made a few weeks ago.  Where are you going to find that in Thailand? and good luck getting my wife to make it. 

  Anyone mentions the burned on the top part , in the back earns a place on my Sh*tlist . If I ever win the lottery you are all screwed.

That's a bit like yesterday. My Mrs was cooking lunch for us both and I casually stated that she was more of an arsonist than a cook. Not a big problem, I can still see the computer screen through my one good eye....

Tell me about it! She's very handy with a frying pan, just not when it comes to cooking. 

IF you make pancakes, put some garlic in it. Used to do powder or granulated, but now started doing fresh squeezed garlic in the batter. It enhances taste overall, even if you put sweet things on it.

Once just tried it and it was good. So now I do all the time. 

 

You can put anything on a pancake bacon, cheese, jam, syrup, peanut butter (with or without chilipaste).

You can also make a mixture of grinded meat, onions , bell pepper fried and put it on the pancake, nice tasty thing then.

Instead of bell pepper you could use taugé, not too long frying that one.

Of course some (or lots) of chili to it, sweet soya sauce and (lots) garlic, mixed with the mixture. Depending on how you want it.

 

Of course you could use this kind of mixture to put it in macaroni.

 

If your preparing chili's dont use your hands to wipe in your eyes ! It is even worse then going to toilet.

Also if you "play" with your wife, she will be jumping and running around.

Washing hands helps some, but it has to wear off.

 

My wife loves Baileys, so make her (sort of) that. Some sweet condensed milk, cacao and then rum or whiskey. 

She doesnt like rum or whisky straight or mixed with cola, but she loves my Baileys mix.

The whole thing sounded good, 

But the above sounds really interesting. Me and the wife lived in the US for close to 12 years and while there she also developed a taste for Baileys . I will try this tomorrows. I have both Captain Morgan rum and JD. I will try a bit of both and see which works the best.

I think I will keep trying it until I get it right :laugh:

I used to consume 10,000 calories daily during my peak shagging days just to keep my weight stable.

I think the math might be a bit wrong, Or a typo .

If I understand this correctly, a kilocalorie  is 1.000 calories, so 10,000 Kilocalories would be 10,000.000 calories.

My Mrs. too is partial to a Bailey's. I brought this out this trip. It's for a Brandy Alexander. Easy recipes available online. Brandy can be replaced by JD, dark rum etc. Can use milk rather than cream. I think 1/3rd measures of liqueur, spirit and milk/cream are more palatable to the Thai lady. Shaken or stirred with a bit of ice and she will be suggesting you open a cocktail lounge. 555

Made a batch of Bailey's and turned out pretty good actually.  Using Jameson's Irish Whiskey.   Did a side by side test, and I think with a tweak or 2, (less JIW & full cream) could get really close.  Used half & half, and noticeably part of the difference.  Pinched recipe of internet.

I have all the recipients I need. 

This was in my bookmarks, so guess I used this as a guide.  Got the Jameson's suggestion from comment, (tasty stuff by itself).  

 

As stated, mine, Jameson was a bit more noticeable, and a bit thinner texture, but due to me using half & half instead of heavy cream.

 

Damn tasty, and until doing a side by side, (noticeable difference), bit close enough that I was really happy with recipe.

Congratulations on your newly invented dish.

 

Obviously, you made too much stuffing, and the dish now looks more like 'stuffing with peppers and tomatoes'.

 

I agree you are unlikely to find that in Thailand or elsewhere to be honest.

I wish I could take credit for it's invention but I am afraid George Santos took credit already:tongue:

Actually it is a Greek dish , I had this summer when we were vacationing there . 

Usually difficult to recreate here in thailand because it's so difficult to find nice , large beefsteak tomatoes . In all my years hede I has never found them and suddenly they are all over the morning market in Khon Kaen.

You scoop out the tomatoes, taking care not to brake them and put the scoops in a food processor with onion , dill, salt a pepper, then you mix it with rice, round pork or beef, par boil it for 10-15 minutes. Consequently you have a lot more filling , than  you took out from the tomatoes.

the excess I use to fill the Peppers, and fill around the tomatoes and peppers. .Then cover with tinfoil. bake for 45 min, remove foil and bake until tops of the tomatoes and peppers are caramelised. But not until you burn them as I did with some. I guess my oven has a hot spot, because all the others were fine.

Then when you need some , cut the top , take out what you need and re-seal a bit lower. 

The hotdogs in The picture below , has been opened , and re-sealed so many times , I am getting to the end of the bag,

But the hotdogs are as fresh as the day I bought them.

I bought mine from the US, a few years ago, and use with a small voltage converter 

But they sell them at Lazada for 500-3000 bht. I also buy my refill bags there.

Trust me when I tell you it will pay for itself  in a couple of months. I buy australian beef at Macro, when ever it is on sale, vacuum seal it and freeze . Even shelled walnuts, I vacuum seal, and when ever I want some, I open the bag take out as much as I need and then vacuum seal again.

So I am not sure why we do, but when I checked to make sure I was right, which is usually a waste of time since I always am. :tongue:

No need. Even your source stated that I am right. i.e.(equal to 1 large calorie). The calorie figures you see expressed everywhere are those ‘large’ calories or kcal.

I thought a calorie was a colorie. Now we have large calories and small calories?

So am I , but IMO setting the kitchen on fire is not a good enough reason.

Not my fault the paper plate were to close to the stove.

Anyway, our outside kitchen is not so bad, and when I need to pee , plenty of trees nearby.

Some eggtra tips for some eggcellent egg handling & preparation.  A couple new eggamples to make poached eggs.   Like the glass in the pan of boiling water @ 11:40

 

Most you won't use, but if like me, bored already, and it's raining out ... this will help pass 15 minutes easier.

Looks fantastic......always had a wife/GF to cook for me from 17........but was a single dad for 10 years....so the four kids took it in turn to cook.

 

I can do salads, beans on toast, cheese on toast......so I survive.
