Today's lunch: Fish Vegetable Curry with salad.

Ingredients: Other than warm rice.

 

Curry: Mackerel, onion, capsicum, eggplant, potato, tomato paste, and water.

 

Salad: Coleslaw, cucumber, carrot(pre-cooked), and tomato.

 

Seasonings:

Curry: Curry powder, chicken stock, soy, oyster, fish sauce, grated garlic.

 

Salad: Soy and oyster sauce, vinegar, and pepper.

I'm about banana'd out, even after the squirrels & birds did their sampling, still to many to eat.  Really nice variety though, fat, dark green/brown, and really sweet.  Best bunch so far.

Another day ... another loaf.  Using WWF (40%) & BF.  Weighs 100+gr more than the White bread above, but doesn't stand as tall.  Dough was a bit shaggy, so added 100 gr of flour (50/50 added).

 

The Imperial brand WWF @ Makro looks quite nice, though think I'll grind the germ & bran down next time.  Weren't whole seeds, but still larger pieces than I want in my bread.

Was going to cook a roast beef, but heading out of town, and too much to eat, so in the freezer.  Rendered down the fat yesterday, from the Picanha cap (rump), so Beef Tallow is restocked,

 

Lazy day, no real cooking, and KFC Zinger & Swensen's (2/1) for dinner 😎

Homemade Zinger .. damn that was good, at probably half the price, twice the meat

Apples, br. sugar & cinnamin.  For something tomorrow & beyond, as ate too many carbs already today.   Turnovers, pancakes or Roti, maybe some applesauce.   Had apples I had to use up.  Still got a few, and haven't made Apple Butter in a dogs again.

Another day, another loaf, with technique vid ...

Had a few people ask about bread making, so short vid may help.  Things that are a must, scale or convert to cups, and be as close as possible.  Instant read thermometer, for water temp & done temp.

 

The right yeast, I use 'red' for no or less than 10% sugar added, by weight of dry ingredients.   

 

350 ml water (IF all bread flour) @ 110°F +/-, add yeast (10 gr) & add sugar is using (10 gr).  While that is doing it's thing, to make sure yeast is alive.

 

I weigh 300gr of flour into stand mixer bowl, then 10gr salt, then 200 gr of more flour.  Give that a quick mix.  Add the water/yeast/sugar, and turn on to #1, to mix, for 6 mins, then #2 speed for kneading, about 6 mins also.

 

If no food processor or stand mixer, you'll need to mix in a bowl, then knead for about 10 minutes.  Till you can give the dough a tug, stretch a bit, without it tearing easily.   Rest of my fancy, professional technique, in vid.   Obviously, any idiot can make bread.  So much for pro technique 🙄

 

 

Ingredients, flour total 500gr, this loaf is whole wheat, so the 200 gr is 200 gr or whole wheat flour.

 

Water for basic all 500gr bread flour will be 350ml.   I've been experimenting with water & whole wheat, as 350ml is too much, as is 300ml (this loaf) for whole wheat, as I seem to be adding a bit of flour between mixing & kneading cycles, as dough a bit shaggy.   Still turns out good.

 

I don't put steaming water in the oven while cooking.   If you want a harder crust, give a spray / misting of water, at start, and when adjusting temp down to 175°C (~350°F) after the first 11 or 12 mins of highest temp of oven w/fans on, if having.   

 

Total bake time is about 30 mins or internal done temp @ 190°F

Cut parchment paper a bit larger than pan, then slits down to size of pan, so when put in, kind of stays put.   Actually don't need parchment paper, could spray with oil, or nothing at all, as shouldn't really stick to pan, but if does, just easier to have parchment paper.  I never need to clean pan, and use parchment over & over till it falls apart 🙄

Don't cut till almost completely cool, or you'll lose moisture.

I should have started to bake my own bread years ago !

It is cheaper and far better than what I can buy here,

(not living in Pattaya/CM or Bangkok).

And no added nasties and no sugar.

Even without a mixer , it is not much work and 

not much cleaning up after.

Any of you try other grains besides whole wheat for bread ?

Like rye , barley , oats or other.

Which kinds of oats , like the big ones from Aro at makro , or

those smaller australian ones , I forget the name , something Mac... .

Or just put them in the blender till it is flour?

How about peanuts ?

I've done with & without whole wheat.   Really not satisfied with the rye flour here, though only tried 2 brands.  Forget the other brand, and not worth remembering.

Yes I bought and used the schmidt rye too, mixed with wheat or alone with bread flour,

it is ok , but not worth the higher price.

 

But my question was more about combining them into a multi grain bread.

Are there other grains to considder ?

How about not ground grains ?
