You're right to double-check - the embassy's request does sound straightforward, and it's good to be cautious with wording when it comes to visa applications. What they’re asking for is a simple one-page letter addressed to the Royal Thai Embassy in London, where you introduce yourself, explain your remote role, and confirm that your work does not engage with the Thai labor market.
If that were true (it's highly improbable that you don't know the exact number of your own animals involved!), it's likely an indication of you, or your dogs and cats, being troublesome.
My daughter recently went to Morocco from the UK was all inclusive 5 star family resort, Thailand has nothing like that, she is able to have 2 or 3 holidays per year less than what it would cost her to come to Thailand.
Actually that's a good idea to do it at the same time, but unfortunately I can't as we have kids in school who'll need picking up unless we get super lucky with the queue.
