Some cookbooks do some explaining of it.  I was wondering who in the US was spending $5/lb for spuds the size of a ping-pong ball, I thought it was a foodie thing.  

 

Those little red, fingerling and gold potatoes are great in stews.

They are horrible.

The potatoes that were grown in the fields 1/4 mile from my home in Washington State were just outstanding.
The spuds I've bought that are grown around Chiang Mai aren't bad, but really not comparable either - just different.
But honestly - they're not bad, and piled with enough "fixin's" they're great!

The quality of the humble potato in Thailand varies from store to store; sadly, most are of a low standard simply because of the way they are handled and displayed, the actual potato was probably fine initially, but exposure to strong light, high temperatures and humidity soon takes its toll. 
By far the best I've seen (and purchased) is in Makro, where they are not washed, only brushed, consistently of a good standard and all-around usage. Definitely on par with UK supermarket quality, albeit with a lack of variety. It would be nice if they displayed variety and the country of origin! 

BTW, most of the potatoes in Thailand are sourced from China.

I've bought decent spuds in Makro, Big C, and at fresh markets in Chiang Mai.  Quality can flip back and forth between Big C and Makro based on the batch and time of year.  If one batch sucks, I go to the other store.

My miss's makes them in the airfryer, she's got it off to a fine art, potato wedges, Ive got some English style Chinese curry mix, curry and chips next time, 

When we were kids sometimes for supper we would get a jacket potato done in the oven with pickled red cabbage, we didn't have microwaves them days,

He's banned. From all of them. I am not permitted to tell what he did...............

Bubble and squeak. Either leftover potatoes or make a batch of mashed potatoes. Any leftover cooked veg you may have mixed in and then fried as patties. Come out very well in the air fryer. Ideal to make with leftovers from a Sunday roast.

I hate it. It's 30 min drive to the nearest shop, it stinks to high heaven because of the meat and fish displays, and if SWMBO goes shopping I can get a couple hours kip in. WIN-WIN.

Yes I agree, the potatoes in Makro are good quality and firm to the touch, I can not tell the difference between those and the ones I buy in the UK.

 

Good for mashing, french fries and chips(English chips not crisps).

 

Oh, and great in home made massaman curry with OZ/NZ beef (also from Makro).

Just one advice for anyone never made them. 

When you grate the spuds you then squeeze out all the liquid (starch) and trust me there is plenty. 

Not sure how they would go in airfry. 

My mum (god bless her) just shallow fry them 

Crispy better than undercook.

That sounds good.  Hash in about any form is excellent.  Especially  with a big dollop of sour cream!!!
I'm getting so good ideas for recipes that I haven't made in a long time.  Hash, German Potato Salad, all great eating!

Thinking the German one you posted just above could have chorizo instead of the ham. 

Both would be nice.

Forgot to mention Worcesteshire Sauce. Mushroom ketchup is also an excellent idea
